These little nut butter stuffed dates covered in a smooth & creamy chocolate are definitely my new favorite treat! Dates have always been one of my favorite toppings on salads, ingredients in baked goods and slathered on pizza.

Dates: Dates are naturally sweet, soft & chewy with a rich caramel esque flavor! These wrinkly fruit provide beneficial macronutrients and dietary fiber. Medjool dates are often used as a sugar replacement in whole-food plant-based recipes.
INGREDIENTS:
6 Pitted Medjool Dates
25g Justin’s Cinnamon Almond Butter (divided between dates)
12 whole Trader Joe’s 50% Less Salt Roasted Peanuts
3 pieces Artisan Kettle Bittersweet Chocolate
1 tsp Coconut Oil
DIRECTIONS:
Slice date length wise, be sure to only cut one side. Spread almond butter inside the date, place two peanuts lengthwise and put the two halves of the date back together. Repeat this process for the remaining 5 dates! In a microwave safe dish, melt chocolate squares and coconut oil 30 seconds at a time until smooth and runny. Fully submerge date in chocolate, once fully coated place on parchment paper. Repeat this process until every date is covered in chocolate. Place dates in fridge for 20 minutes or until chocolate hardens, serve and enjoy!
