Buffalo Chickpea Salad

I think it’s clear by now that I’m obsessed with chickpeas! These little legumes are extremely versatile and incredibly tasty! This recipe is simple to make and perfect for a post-workout meal!

INGREDIENT FACTS & BENEFITS:

Garbanzo Beans: Garbanzo beans also known as chickpeas are part of the legume family. Garbanzo beans are a great source of protein, fiber and a variety of micronutrients.

INGREDIENTS:

1 can Garbanzo Beans

28g Follow Your Heart Vegenaise

45g The New Primal Noble Made Hot Buffalo Sauce

20g Sir Kensington’s Dijon Mustard

60g Rainbow Carrot (shredded)

2 tbsp Bubbies Kosher Dill Relish

2 stalks Celery (minced)

Dash Garlic Powder

Pinch Sea Salt

Pinch Ground Pepper

TOPPINGS:

1 Joseph’s Flax, Oat Bran & Whole Wheat Pita Bread (toasted) or 2 slices Sourdough Bread (toasted)

20g Baby Spinach

28g Snack Factory Pretzel Crisps Original

DIRECTIONS:

Drain and rinse chickpeas. Mash chickpeas in a large mixing bowl. Once chickpeas are mashed, combine remaining ingredients and mix until well combined. Serve over sourdough bread or bread of choice!
