Sweet Potato & Cauliflower Street Tacos

Simple and delicious vegan street taco recipe! Enjoy on Taco Tuesday or any other day of the week!

INGREDIENT FACTS & NUTRITION:

Tofu: Tofu is a complete protein containing all 9 essential amino acids. Tofu is a good source of healthy fats and a variety of micronutrients. There are different types of tofu categorized by firmness and water content. The firmer tofu contains less water meaning more calories and nutrients. Silken & soft tofu contain more water meaning fewer calories and nutrients. Tofu is made from soybeans and contains isoflavones, a phytoestrogen similar to estrogen that may provide certain health benefits for women during menopause and the potential for a reduced risk of heart disease. Eating foods that are higher in protein can help lower your appetite.

ROASTED VEGGIES

250g Cauliflower (small florets)

250g Sweet Potato (cubed)

1/2 tbsp Olive Oil

1 tsp Chili Powder

1 tsp Ground Cumin

1 tsp Smoked Paprika

1 tsp Garlic Powder

1/2 tsp Oregano (dried)

1/2 tsp Sea Salt

1 lime (juiced)

DIRECTIONS:

Combine ingredients in a large mixing bowl. Mix until the seasoning coats the veggies evenly. Roast at 425 degrees fahrenheit for 25 minutes, tossing halfway.

TOPPINGS:

5oz Organic Super Firm High Protein Tofu (pan fried until golden brown)

2 Trader Joe’s Carb Savvy Tortillas Made With Whole Wheat

1 mini cup Wholly Guacamole Classic Minis

60g Black Bean

50g Tomato (diced)

Per serving: 3 servings (2 tacos per serving)

CHIPOTLE LIME CASHEW SAUCE

30g Raw Cashews (soaked for 2-3 hours)

1 Whole Chipotle Pepper In Adobo Sauce

1 tsp Garlic (minced)

1/2 tsp Chili Powder

1/2 tsp Smoked Paprika

1/2 tsp Ground Cumin

1/4 tsp Sea Salt

1/4 cup Water

1 Lime (juiced)

DIRECTIONS:

Drain and rinse cashews. Combine ingredients in a food processor or blender, blend until smooth and creamy.

Per serving: 3 servings (2 tacos per serving)
