VEGAN CHEESY ROASTED CHICKPEAS

These vegan cheesy roasted chickpeas will give Cheez-Its a run for their money!

After taking a few puffs of that good good ..and reading the ingredient list on the back of a Cheez-It box (as any responsable vegan would do in the grocery story lol).. I’ve come up with a pretty tasty knockoff!

INGREDIENT FACTS & BENEFITS:

Garbanzo Beans: Garbanzo beans also known as chickpeas are part of the legume family. Garbanzo beans are a great source of protein, fiber and a variety of micronutrients.

Nutritional Yeast: Nooch is a great source of protein, B vitamins and trace minerals. Unfortified nutritional yeast does not contain added micronutrients. Fortified nutritional yeast contains synthetic micronutrients that are added during the manufacturing process. Nooch is a complete protein that contains all 9 essential amino acids! One tablespoon contains 30-180% of the recommended daily intake for B vitamins. If you are a vegan/vegetarian it’s highly encouraged that you supplement with plant-sourced B-12. Trace minerals are involved in metabolism, growth and immunity. Nutritional values vary between brands.

Roasted Chickpeas

1 can Unsalted Chickpeas (drained & rinsed)

8mL (~1/2 tbsp) Olive Oil

1/2 tsp Sea Salt

Cheesy Seasoning

2 tbsp Bob’s Red Mill Nutritional Yeast (nooch)

1/2 tsp Granulated Garlic

1/2 tsp Sea Salt

1/4 tsp Paprika

1/4 tsp Cayenne Pepper (optional)

1/4 tsp Turmeric

DIRECTIONS:

Drain and rinse chickpeas, pat dry. In a small mixing bowl combine chickpeas, olive oil and sea salt. Toss until fully coated. Bake chickpeas at 400 degrees fahrenheit for 30 minutes, flipping halfway. While the chickpeas bake, prep the cheesy seasoning. Once the chickpeas are done baking, immediately toss them in the cheesy seasoning until fully coated. Serve hot and enjoy those munchies!
