Pumpkin Spice Baked Oatmeal

I’ve been on the hunt for flavored peanut butter powder and when I came across PUMPKIN SPICE FIT PB POWDER, I just had to make a baked oatmeal recipe with it!

INGREDIENT FACTS & BENEFITS:

Rolled oats: Oats are a great source of dietary fiber called beta-glucan and complex carbohydrates to help keep you satiated and regulated. Eating foods that keep you full may help lower your calorie intake and lose weight if that’s your goal. Oats are loaded with important vitamins, minerals and antioxidants.

Peanut Butter Powder: Peanut butter powder is created by pressing out most of the natural oils from roasted peanuts and then grinding the nuts into a fine powder. The result is a peanut butter product containing 85% fewer calories from fat.

Chia seeds: These tiny seeds are high in soluble fiber, protein, omega-3 fatty acids and loaded with micronutrients! Chia seeds can absorb 10 times their weight in water due to their high soluble fiber content, expanding in your stomach to help keep you full and lower your calorie intake. Eating foods that are higher in protein can help lower your appetite. Chia seeds are higher ALA omega-3s. Our body has a hard time converting ALA into EPA and DHA, if you are vegan/vegetarian it’s highly encouraged that you supplement with plant-sourced EPA and DHA.

INGREDIENTS:

50g Rolled Oats (blended) or Oat Flour

4oz Unsweetened Vanilla Almond Milk

16g PB Fit Pumpkin Spice

60g Pumpkin Purée

1 tbsp Chia Seeds

1 tbsp Walden Farms Pancake Syrup

10 drops Myprotein Flavdrops Vanilla

1/2 tsp Cinnamon

1/4 tsp Baking Powder

Pinch Nutmeg

Pinch Salt

TOPPINGS:

1 Cinnamon Rice Cake

1/2 Honeycrisp Apple (sautéed with cinnamon)

DIRECTIONS:

Thinly slice honeycrisp apple. Sauté apple slices in a small skillet with a sprinkle of water and cinnamon for 5-8 minutes or until liquid has evaporated. Combine remaining ingredients in an oven safe dish and whisk together until well combined. Bake at 375 degrees for 25 minutes!

*MEAP PREP* combine dry ingredients in mason jars or Tupperware of choice and store for a later date!

    Hi Jessi,

    I made this recipe twice and its amazing!! I didn’t have pumpkin puree so I just subbed it for mashed banana, but ordered some online and can’t wait to try it with pumpkin puree. The first time I actually used chocolate PB2 and it came out delicious. The second time I mixed pumpkin spice and plain PB2 to get the same number of grams you used so I could improvise the pumpkin spice flavor. Pretty cool that this recipe has a lot of potential with flavor experimenting!! I can’t wait to try making your pancake recipes too!!
