Vegan Maple Protein Donut

These protein donuts are my new obsession! They are low calorie, high protein and extremely tasty!

INGREDIENT FACTS & NUTRITION:

Vegan Protein: There are many sources of vegan protein, but to give you an idea I’ll list some now.. pea, pumpkin seed, hemp, quinoa, whole grains, soy, seitan, TVP, chia seeds, flax seeds.. I think you get the idea! Not all vegan proteins are complete proteins. Soy is one of the few plant-based proteins that contain all 9 essential amino acids, vegan protein powders contain complementary protein blends to create a complete protein. You can recieve all 9 essential amino acids by having a well balanced vegan diet.

Pumpkin Purée: Much like unsweetened applesauce, pumpkin purée is a great substitute for butters & Oils. Pumpkin purée is lower in calories and allows you to enjoy your favorite baked good while dieting!

Flax Meal: Flax meal contains a good amount of protein, fiber and omega-3 fatty acids. Flax meal is considered a rich source of micronutrients. Flax seeds are higher ALA omega-3s. Our body has a hard time converting ALA into EPA and DHA, if you are vegan/vegetarian it’s highly encouraged that you supplement with plant-sourced EPA and DHA. Flax seeds are high in both soluble and insoluble fiber, just one tablespoon contains 3g of fiber! Soluble fiber expands in your stomach slowing digestion and nutrient absorption to help keep you full and lower your calorie intake. Insoluble fiber can help promote bowel health and regularity. Eating foods with a lot of fiber can help keep you full longer.

DOUGH

68g Bob’s Red Mill All-Purpose Flour

68g Orgain Plant Based Protein Powder Vanilla Bean

1 tsp Baking Powder

1 tsp Cinnamon

1/4 tsp Nutmeg

1/4 tsp Salt

79ml Almond Breeze Unsweetened Vanilla Almond Milk

60g Pumpkin Puree

59ml Walden Farms Pancake Syrup

1 tbsp Bob’s Red Mill Whole Ground Flaxseed Meal + 3 tbsp Water (flax egg)

1 tsp Maple Extract

GLAZE

75g Lakanto Sugar Free Powdered Monkfruit Sweetener

1 tbsp Walden Farms Pancake Syrup

Splash of Almond Breeze Unsweetened Vanilla Almond Milk (if needed)

DIRECTIONS:

Prepare the flax egg and set aside. Add all the dry ingredients in a large mixing bowl and whisk to combine. Combine the wet ingredients, including the flax egg and stir to incorporate. Add the wet ingredients to the dry ingredients and whisk to combine. Using a ziplock bag pipe the dough into your lightly greased donut pan. Bake at 350 degrees fahrenheit for 20-25 minutes. Let them cool completely before removing them from the donut pan. While the donuts are cooling prepare the glaze. Once the donuts have completely cooled dip them into the glaze mixture to fully coat the top of the donut. Repeat this process for the remaining donuts, serve and enjoy!

    Sooo good. I put them in the air fryer and they kind of turned into ginger snaps (cookies) and they were AMAZING, no regrets. Next time I’ll try to make them actual donuts, I had way too much liquid and they kind of just sank.

    I’m happy I found these! I’ll definitely make them again
