This is one of my favorite meals to prep, it’s simple and extremely versatile! I make this for my friends who say they don’t like tofu and every single one of them ends up loving this recipe!
INGREDIENT FACTS & NUTRITION:
Tofu: Tofu is a complete protein containing all 9 essential amino acids. Tofu is a good source of healthy fats and a variety of micronutrients. There are different types of tofu categorized by firmness and water content. The firmer tofu contains less water meaning more calories and nutrients. Silken & soft tofu contain more water meaning fewer calories and nutrients. Tofu is made from soybeans and contains isoflavones, a phytoestrogen similar to estrogen that may provide certain health benefits for women during menopause and the potential for a reduced risk of heart disease. Eating foods that are higher in protein can help lower your appetite.
Liquid Aminos: Liquid aminos is a plant based protein seasoning made from soybeans. Comparable to soy sauce, liquid aminos have a milder and slightly sweeter taste. Liquid aminos are made by mixing hydrolyzed soybeans or fermented coconut sap with water, resulting in a naturally gluten-free product. Liquid aminos may contain 16-17 essential and non-essential amino acids. Amino acids are vital for protein synthesis, tissue repair and nutrient absorption.
Tofu Tacos
1 block Organic High Protein Tofu
3 tbsp Braggs Liquid Aminos
1/4 cup Tomato Sauce
2 tsp Chili Powder
2 tsp Garlic Powder
1 tsp Cumin
1/2 tsp Black Pepper
1/4 tsp Cayenne
Pinch Cinnamon (optional)
DIRECTIONS:
Open and drain tofu, press if needed. Crumble tofu in a large mixing bowl. Combine remaining ingredients, stir to incorporate. Bake at 400 degrees fahrenheit for 25 minutes, mixing halfway. Assemble taco, bowl or wrap with favorite toppings and enjoy!

Vegan Ceviche
2 Roma Tomatoes (diced)
1 English Cucumber (diced)
1 can Hearts of Palm (diced)
1/2 head Cauliflower (florets)
1/2 Red Onion (diced)
2 tbsp Lime Juice
Zest of 1 Lime
Pinch Sea Salt
DIRECTIONS:
Combine ingredients in a large mixing bowl, stir until fully incorporated. Serve over Tofu Tacos or on the side with pretzels!
