Strawberry Lemon Protein Loaf

INGREDIENT FACTS & BENEFITS:

Tofu: Tofu is a complete protein containing all 9 essential amino acids. Tofu is a good source of healthy fats and a variety of micronutrients. There are different types of tofu categorized by firmness and water content. The firmer tofu contains less water meaning more calories and nutrients. Silken & soft tofu contain more water meaning fewer calories and nutrients. Tofu is made from soybeans and contains isoflavones, a phytoestrogen similar to estrogen that may provide certain health benefits for women during menopause and the potential for a reduced risk of heart disease. Eating foods that are higher in protein can help lower your appetite.

Vegan Protein: There are many sources of vegan protein, but to give you an idea I’ll list some now.. pea, pumpkin seed, hemp, quinoa, whole grains, soy, seitan, TVP, chia seeds, flax seeds.. I think you get the idea! Not all vegan proteins are complete proteins. Soy is one of the few plant-based proteins that contain all 9 essential amino acids, vegan protein powders contain complementary protein blends to create a complete protein. You can receive all 9 essential amino acids by having a well balanced vegan diet.

Unsweetened Applesauce: Much like pumpkin pureé, unsweetened applesauce is a great substitute for butters & Oils. Unsweetened Applesauce is lower in calories and allows you to enjoy your favorite baked good while dieting!

Protein Loaf

170g Silken Tofu

112g Bob’s Red Mill All Purpose Flour

112g Steel Supplements VEG-PRO Strawberry Cheesecake

56g Unsweetened Applesauce

8oz Almond Breeze Unsweetened Vanilla

1/4 cup Walden Farms Pancake Syrup

2 tbsp Lemon Juice

Zest from 1 Lemon

2 tsp Baking Powder

1 tsp Vanilla Extract

1/2 tsp Salt

1/4 tsp Baking Soda

Lemon Glaze

1 cup Lakanto Sugar Free Powdered Monkfruit Sweetener

1 tbsp Lemon Juice

1 tbsp Almond Breeze Unsweetened Vanilla

TOPPING:

28g Good & Gather Freeze-Dried Strawberry Slices

DIRECTIONS:

Combine wet ingredients in a food processor or blender, blend until smooth. In a large mixing bowl combine dry ingredients, whisk until fully incorporated. Combine wet ingredients and dry ingredients, don’t over mix. Pour mixture into lightly coated loaf pan. Bake at 350 degrees fahrenheit for 35-45 minutes. Let the Strawberry Lemon Protein Loaf cool completely, then remove from pan. While the loaf is cooling prepare the Lemon Glaze. Drizzle the glaze over the cooled loaf, serve and enjoy!

Per serving: 4 servings (or more depending on how you slice it)
